After falling to a 2-0 defeat to Caen, Jocelyn Gourvennec left his post as manager with Bordeaux 12th in Ligue 1, just four points above the relegation zone.
Poyet has been without a job since he resigned as manager of Chinese Super League side Shanghai Shenhua back in September after ten months in charge.
The Uruguayan has previously managed in England where he had a four year spell at Brighton & Hove Albion before taking charge of then Premier League side Sunderland between 2013 and 2015.

One of Poyet’s first tasks will be to try and convince star player Malcom to stay at the club.
The Brazilian has been the subject of interest from North London rivals Arsenal and Tottenham, with The Telegraph reporting Tottenham as the favourites for Malcolm’s signature after his representatives met with Spurs last week.
